Tomato, Feta & Basil Salad

Happy 4th of July!

After Googling a good picnic type side dish to take to my mom’s pool party today, I stumbled upon this delicious and healthy recipe! I made some tweaks to make it my own (red onion instead of scallions and additional seasonings). This is what I will be making and taking to share with friends and family. I can’t wait to try it!

Ingredients
  • 4 cups chopped roma tomatos
  • 4 cups partially peeled & chopped cucumbers
  • 3/4 cup chopped red onion (optional)
  • 1/2 cup chopped fresh basil
  • 1/3 cup olive oil extra virgin
  • 3 tbsp balsamic vinegar
  • 1/3 cup crumbled feta cheese to taste
  • 1 tsp salt
  • 1 tsp finely ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions
  1. Toss all of the veggies together in a large bowl (I toss in the serving bowl). Add feta to the top of the veggie mixture. Refrigerate until ready to transport or serve.
  2. Add olive oil, vinegar, and spices in a dressing container and shake vigorously. Refrigerate until ready to transport or serve.
  3. Just before serving, pour dressing mixture on top of veggie salad. Toss together again. Voila!
